Vegan Baked Spicy Curry Broccoli

happy happy weekend everyone! i am so thrilled to bring you my newest savory creation! Vegan Baked Spicy Curry Broccoli is packed with so many wonderful flavors and nutrients. it’s going to become a new favorite of yours, i just know it.

you’re going to need broccoli florets, about 10 ounces to be specific and some other ingredients for both the coating and sauce.

so, i make this absolutely delicious gluten-free curry batter that is jam packed with flavor. then, i bake the broccoli florets in the oven until the coating is slightly crispy.

ooooh and then there’s this delicious sauce with harissa paste, coconut cream, and a few more ingredients that will simply give you the ultimate culinary experience.

when it comes to the batter, you’re going to need the following ingredients!

  • gluten free flour

  • flax meal

  • curry powder

  • onion salt

  • garlic powder

  • avocado oil

  • sparkling water

  • unsweetened plain almond milk

for the sauce, i made a really simple and yummy harissa based one! you’re going to need just a few ingredients for this flavorful deliciousness.

Alex and i bought harissa paste from Trader Joe’s and it’s sooo good. harissa is a hot chili paste that originated in Tunisia, North Africa and it’s is commonly used as a dip or marinade.

there are other great brands out there and i’ve also tried mina, which is amazing.

in terms of spiciness, i think it’s up there, so i only used one tbsp but you can add an amount according to whatever spiciness level you’re looking for.

i recommend starting with 1/2 tbsp and then adding more depending on how spicy you would like it!

i added some fresh basil to the finished product because it’s just so refreshing and fragrant, so i highly recommend!

this should make about 3 servings, at least that’s what it yielded for us! if you are making a large amount, you can always double the batter amount.

for the broccoli florets, i wanted to make sure there was a thick coating but not too overpowering where you can no longer taste the broccoli.

since i used 10 ounces, almost an entire bag that i bought at Trader Joe’s, I just divided the batter in half and coated 5 ounces of broccoli florets in each.

Ingredients

  • 10 ounces broccoli florets
  • curry batter
  • 1/2 cup gluten free all purpose flour

  • 1/4 cup flax meal

  • 1/2 tbsp curry powder

  • 1/2 tbsp onion salt

  • 1 tsp garlic powder

  • 2 tbsp avocado oil

  • 2 tbsp plain sparkling water

  • 3/4 cup plain and unsweetened dairy free milk

  • sauce
  • 1 tbsp harissa paste or however much you’d like

  • 1/4 cup plain and unsweetened coconut cream

  • 1/4 cup vegetable broth

  • 2 tbsp tomato paste

  • 1/2 tsp onion powder

  • 1/2 tsp garlic powder

  • sea salt and pepper to taste

Directions

  • preheat the oven to 400 degrees. whisk the curry batter ingredients well until the batter is smooth.
  • divide the batter in 1/2 into two bowls add 5 ounces of the broccoli florets, so half to each bowl.
  • coat the florets as evenly as you can and place on a parchment lined baked tray.
  • bake at 400 degrees for 27 minutes. meanwhile, whisk the sauce ingredients until a smooth consistency.
  • add the baked broccoli florets to a bowl and pour the sauce on top. mix well until everything is evenly coated and enjoy!!
