Ingredients
salad
1 bunch lacinato kale thinly sliced and lightly massaged in avocado oilÂ
2 cups shredded brussels sprouts lightly massaged in avocado oilÂ
2 medium avocados cut into cubes
8 ounces crumbled vegan feta
1/2 cup pomegranate arils
3/4 cup chopped walnuts
2 cups strawberries
1 can rinsed and drained chickpeas
1/3 cup chopped red onion
sea salt to taste
dressing
1/3 cup vegan mayo (chosen foods) or thick coconut yogurt
1 tbsp toasted sesame oil
1 tbsp miso paste
1/4 cup vegetable broth
1 grated garlic clove
1 tbsp rice vinegar
1 tbsp balsamic glaze
Instructions
add all salad ingredients to a large mixing bowl.
whisk the dressing ingredients until well-combined and pour over the salad ingredients.
mix well and enjoy at room temp or chilled! store in the fridge in an airtight container.
