Easy Vegan Sheet Pan Quesadillas

welcome to my new series, Mary’s Monday Meals where I give you a new meal option, like these Easy Vegan Sheet Pan Quesadillas! they are amazing in every way and super easy to make.

if you have some tortillas that have been sitting in your fridge, try making Easy Vegan Sheet Pan Quesadillas!

you can use any veggies that you want along with your preference of vegan protein.

when it came to choosing veggies, i simply used anything that was in my fridge.

sweet potato, onion and red bell pepper were what i had on hand!

also, i used some spinach that was sitting in my fridge along with extra firm tofu.

while i recommend crumbled tofu in this recipe, tempeh or even seitan would be great reaplcements.

you could omit those altogether and just use beans although i did also add a can of refried beans to my Easy Vegan Sheet Pan Quesadillas too.

for a sauce, you can make your own or use store bought like i did.

siete enchilada sauce is amazing and it was on sale at my local whole foods.

also, grab some of your favorite vegan shredded cheese because Easy Vegan Sheet Pan Quesadillas aren’t complete without some.

Easy Vegan Sheet Pan Quesadillas

Ingredients

  • 16 tortillas -used siete
  • 4 tbsp avocado oil

  • 1 medium cubed sweet potato

  • 2 small-medium diced red bell peppers

  • 1 small onion diced

  • 3 handfuls spinach

  • 14 oz crumbled tofu

  • 1 can refried beans

  • 15 ounces enchilada sauce

  • 8 oz dairy free cheese shreds

Directions

  • preheat the oven to 375 degrees.
  • add the veggies, tofu and spinach to a pan with avocado oil.
  • saute on high for 5 min. then, add 1/2 jar of enchilada sauce. cook on medium high heat for 5 more minutes.
  • line a baking sheet with 8 tortillas and then evenly distribute the refried beans on top.
  • add the sauteed mixture on top and then sprinkle with the cheese.
  • place the remaining tortillas on top along with more sauce and vegan cheese if you would like. bake at 375 degrees for 20 min.
  • top with your favorites and enjoy!
