store bought chocolate frosting (or make your own!) whole foods 365 brand is what i used but simple mills and miss jones have great options too.

Unbelievably Vegan Chocolate Chip CupcakesCourse: Cupcakes, Desserts
yields 10-11 cupcakes
2 cups all purpose unbleached organic flour
1 tbsp organic corn starch
1/2 tbsp baking powder
1/2 tbsp baking soda
1 cup organic raw cane sugar
1/3 cup dairy free plain yogurt
1 tbsp apple cider vinegar
1/3 cup unsweetened applesauce
2 tbsp avocado oil
1 cup dairy free milk
1/2 tbsp vanilla extract
3/4 cup dairy free chocolate chips
- store bought chocolate frosting
- preheat the oven to 350 degrees.
- mix the cupcake batter ingredients until a thick yet somewhat runny batter forms. then, fold in the chocolate chips and evenly distribute into parchment paper muffin cups.
- bake at 350 degrees for 30 minutes. cool down completely before frosting and enjoy!
- store in the fridge in an airtight container.
