Vegan and Gluten Free Coffee Cake Muffins

happy Saturday! yay for the weekend and yummy muffin recipes, one of my absolute favorite things to make (and eat lol). Vegan and Gluten Free Coffee Cake Muffins are delicious muffins that are made mostly in the blender and the base is sweetened with bananas. then there’s a delicious crumble topping.

everything about these muffins is perfect. from the taste, to the texture and baking process, i am obsessed.

they are SO much healthier than your average muffin and you can eat them at any time of the day.

Vegan and Gluten Free Coffee Cake Muffins are actually perfect for meal prepping on sunday to have for breakfast during the week.

all you have to do is warm them if you would like and boom, a yummy and nutritious breakfast.

may i suggest adding some vegan butter and a sprinkle of cinnamon on top, oh my gosh, it’s heaven.

that’s honestly not even necessary though because the streusel-like topping is amazing. you would never know it’s on the healthier side.

i use organic brown sugar, gluten free flour, almond flour, extra virgin olive oil, almond butter and cinnamon.

sounds fabulous and easy right? it is, i promise. so the muffins are sweetened with banana like i said and there’s no added sugar :).

you just need 3 large overripe bananas and that does the trick. for the muffins, you’re going to need two flours-almond and gluten free all purpose.

in terms of subs, i don’t have any nor recommend making subs as this is the only way that i made the muffins.

i am totally obsessed with blender muffin recipes, well anything blender actually haha and i know you’ll appreciate that too!

if you don’t have a blender, you can use a food processor to mix everything together.

the muffins bake in the oven at 350 degrees with 32 minutes and they are PERFECT in terms of texture.

slightly dense, but the muffins actually feel super light, it’s amazing.

Ingredients

  • muffins
  • 3 large overripe bananas

  • 1/2 cup creamy almond butter

  • 1/2 cup thick coconut yogurt (used cocojune)

  • 1/4 cup avocado oilΒ 

  • 1 tsp vanilla extractΒ 

  • 1 cup almond flour

  • 1 cup gluten free all purpose flour

  • 1 tsp baking powder

  • streusel topping
  • 1/2 cup almond flour

  • 1/4 cup avocado oil

  • 2 tsp cinnamon

  • 1/4 cup creamy almond butter

  • 1/4 cup brown sugar

  • 1/4 cup gluten free all purpose flour

Directions

  • preheat the oven to 350 degrees.
  • add all ingredients but the flours for the MUFFINS only, not the topping to a blender.
  • blend until a smooth consistency forms and then transfer to a bowl. add the flours and mix until a thick batter forms.
  • in a separate bowl, mix the streusel ingredients together until a thick dough-like consistency forms.
  • add about 1/4 cup of the muffin batter to parchment muffin cups and top generously with the streusel.
  • bake at 350 degrees for 32-35 minutes. store in the fridge or freezer in an airtight container and enjoy!
