the base is a deliciously thick doughy peanut butter and protein mixture that’s filled with homemade raspberry chia jam.

oh, then there’s a topping of peanut butter, maple syrup and coconut oil, because as if all of the other goodies just aren’t enough!

you can enjoy these gems with any jam you like, and to create a shortcut, you can always use storebought.

the jam only takes 10 minutes though, and you will have plenty of leftovers for toast, oatmeal and more.

also, if you’re not a raspberry fan, use any berry that you like! blueberry would delicious and so would blackberry.

use frozen raspberries if you can! i just think the jam turns out better with frozen, but who knows.

you will need vanilla protein powder, and i recommend truvani or garden of life.

Ingredients

  • peanut butter dough
  • 3 scoops vanilla protein powder (31g per scoop)

  • 1/2 cup almond flour

  • 1/2 cup oat gluten free oat flour

  • 1/3 cup runny peanut butter

  • 1/3 cup maple syrup

  • 1 tsp vanilla extract

  • 1/3 cup + 1 tbsp dairy free milk

  • raspberry jam
  • 12 ounces frozen raspberries

  • 2 tbsp chia seeds

  • 1 cup water

  • 1 tbsp maple syrup

  • 1 tbsp arrowroot powder

  • peanut butter drizzle
  • 1/4 cup peanut butter

  • 1 tbsp melted coconut oil

  • 1 tbsp maple syrup

Directions

  • mix the peanut butter dough base ingredients until a thick dough forms.
  • add to muffin cups and make an indent in the center of the dough.
  • for the raspberry jam, add all ingredients to a pot and cook on medium heat for 10-12 minutes or until the jam is thick.
  • once the jam cools down completely, place a spoonful of the jam in the peanut butter dough.
  • freeze for 1 hour. then, add the peanut butter drizzle and enjoy! store in the freezer or fridge in an airtight container and thaw before eating. enjoy!
