Healthy No Bake Cinnamon Rolls

as if cinnamon rolls weren’t good enough, these ones are no bake, made with wholesome ingredients, so flavorful and the perfect snack to have on hand! Healthy No Bake Cinnamon Rolls are going to become your new favorite staple and they’re super portable to take on the go!

happy happy Saturday! yesterday i took a little road trip and y’all know that i need some good snacks on hand. one of my Healthy No Bake Cinnamon Rolls came in handy when the sweet tooth arrived.

so here’s the thing, they’re sweetened with dates, well at least the dough is! when it comes to the center, you can take the traditional route and go with cinnamon and sugar.

i went with a little bit of lakanto mixed with cinnamon and walnuts for some extra healthy fats. you can omit all of these if you want or just pick and choose.

if you’re looking to keep this a completely no added sugar recipe, then i recommend just adding some nuts to the center or even just leaving it plain!

the no bake dough actually has cinnamon in it, so the cinnamon taste will already come through enough if you skip the cinnamon sugar center.

ya know me though, i have such a sweet tooth and the added cinnamon sugar center was just right, especially since there’s no frosting and just plain melted coconut butter on top!

you’re going to make the dough in a food processor and roll it out into a rectangle about 1/3 inch (maybe a little more) thick.

it’s a little sticky but not too bad! you can ever so slightly wet your hands to avoid the sticky texture when evenly distributing it.

since i used my hands, i’m not sure how a rolling pin work, but should be fine!

here’s what’s in the dough!

  • oat flour

  • cinnamon

  • almond butter

  • almond extract

  • medjool dates

  • dairy free milk

  • walnuts

if you don’t want to use walnuts, pecans would probably be the best alternative! also, something like cashew cream would be super yummy in the center!

if you’re looking for some serious decadence, maybe simple mills vanilla frosting! yum, i think i’m going to try that next time.

Healthy No Bake Cinnamon Rolls

Ingredients

  • dough
  • 3/4 cup oat flour

  • 1 tbsp cinnamon

  • 1/2 tsp almond extract (vanilla works too)

  • 1/2 cup walnuts

  • 1/4 cup very creamy almond butter

  • 5-6 large medjool pitted dates

  • 1/4 cup + 2 tbsp unsweetened dairy free milk

  • filling
  • 1 tsp cinnamon

  • 1/4 cup lakanto or coconut sugar

  • 1/3 cup walnuts

  • *note you don’t have to make this much of a filling, i had leftover and didn’t use all of it

  • topping
  • 1/3 cup melted coconut butter

Directions

  • add the dough ingredients to a food processor and blend until a thick dough forms.
  • roll out the dough with your hands or a rolling pin until it’s a rectangle about 1/3-1/2 inch thick.
  • add the filling ingredients but don’t press the nuts in too much because that will break the dough.
  • carefully roll up the dough and place in the freezer for 30 minutes. then, remove from the freezer and cut into circles.
  • melt the coconut butter and pour over the pieces placed on parchment paper. place in the fridge for 30 minutes and then enjoy!
  • store in the fridge or freezer, thaw before eating and enjoy!
