Easy Vegan Chocolate Chip Cookie Cups are the new dessert on the block and you need them in your life! there are minimal, delicious and wholesome ingredients + a food processor needed for the reci0pe. they’re so delicious to eat and easy to put together!
you will need some store bought cookies for this, preferably harder ones. if possible, i recommend simple mills chocolate chip cookies.
the cookies are added to a food processor with some dairy free milk, peanut butter, oats, dates and vanilla extract.

basically, you want a thick cookie dough to form!
then, you can add the cookie dough to some muffin tins and leave a hole in the center because let’s add some peanut butter cups.
don’t worry if your dough gets oily, that’s probably just due to the coconut oil in the cookies i used coupled with the peanut butter.
it’s actually a good thing because the cookie cups bake into crispy perfection on the outside but the inside is soft and chewy.
that’s how you do anything chocolate chip in my opinion- hard on the outside and soft + chewy in the middle.
dunk these gems in some dairy free milk and dang, you have yourself the dessert of the century.

we can count these as semi homemade too! you can make your own chocolate chip cookies, but they would need to be SUPER firm.
you only need two cups and that’s why i recommend just getting a brand like simple mills because the ingredients are amazing and they’re tasty.
the peanut butter cups can be added once the cups have almost fully cooled down. that way, the peanut butter cups won’t melt but they will be slightly warmed through.

if you add the peanut butter cups when the cookie cups are too hot, they will definitely melt, which isn’t necessarily a bad thing haha.
also, if you don’t want to use peanut butter in this recipe, almond butter would be a great sub!
no matter what nut butter you use, just make sure it’s a runny one! Trader Joe’s and Whole Foods both have pretty runny ones.
aaaah and then you can add some chocolate chips because what are these cookie cups without them?
heaven on earth AND if you don’t want to make cookie cups, you can turn the dough into just cookies. make sure they’re thick and bake the cookies a little less time- try 15 minutes.

Easy Vegan Chocolate Chip Cookie Cups bake at 350 degrees for 18 minutes by the way. it’s the perfect amount of time for a hard exterior and chewy center.

2 cups store bought chocolate chips cookies (make sure they’re hard)
4 large medjool dates
1/4 cup dairy free milk
1/2 cups old fashioned oats
1/2 cup runny peanut butter
1 tsp vanilla extract
1/2 cup chocolate chips
vegan peanut butter cups
Directions
- preheat the oven to 350 degrees.
- add all ingredients but the chocolate chips and peanut butter cups to a food processor and blend until a stick dough forms.
- transfer to a bowl and fold in the chocolate chips. it’s ok if the dough is oily- the coconut oil in the store bought cookies coupled with the peanut butter can make the dough oily.
- add to greased muffin tins and leave a hole in the center. bake at 350 degrees for 18 minutes.
- cool for a bit and then add peanut butter cups to the center. enjoy!
