2 cups store bought chocolate chips cookies (make sure they're hard)
4 large medjool dates
1/4 cup dairy free milk
1/2 cups old fashioned oats
1/2 cup runny peanut butter
1 tsp vanilla extract
1/2 cup chocolate chips
vegan peanut butter cups
Instructions
preheat the oven to 350 degrees.
add all ingredients but the chocolate chips and peanut butter cups to a food processor and blend until a stick dough forms.
transfer to a bowl and fold in the chocolate chips. it's ok if the dough is oily- the coconut oil in the store bought cookies coupled with the peanut butter can make the dough oily.
add to greased muffin tins and leave a hole in the center. bake at 350 degrees for 18 minutes.
cool for a bit and then add peanut butter cups to the center. enjoy!
