hello Sunday and hello No Bake Cookies and Cream Bars!! yes, you read that correctly, i made ya the ultimate dessert! you won’t even believe how easy they are to make and the bars require so few ingredients. they’re the perfect treat to have on hand in the fridge or freezer!
ok, so cookies and cream has always been one of my absolute favorite ice cream flavors and why not turn it into delicious bars.
the texture is reminiscent of cake in my opinion and that’s thanks to the coconut flour! you’re also going to need almond flour as that will make up the base.

you can absolutely use Oreos for these bars if you would like! i happen to love Trader Joe’s Joe Joe’s Slims Chocolate & Vanilla Creme Cookies!
they’re not too thick, which is great for the recipe because it makes folding in the cookie pieces easier and distributes well.
you could also use Trader Joe’s regular Joe Joe’s or really any vegan chocolate and cream filled cookie from any grocery store- there are tons!

now, if you’re just not a fan of cookies and cream, you can use my recipe for the base of the bar and opt for another add in!
any crumbled cookies will work well along with just plain old chocolate chips! you can really get creative with this recipe because the add ins won’t make a difference.
the only thing i don’t recommend is using a fresh or frozen fruit because that will make the dough watery and the bars just won’t turn out well.

in terms of dried fruit though, those are totally fair game and i actually think a lemon and dried blueberry bar would be phenomenal.
to make them, follow my bar recipe is exactly and add 1 tbsp lemon zest to the dough! then, instead of the cookies of course, add dried blueberries, yum!
ok, this is everything that you’re going to need to make No Bake Cookies and Cream Bars:
- almond flour
- coconut flour
- maple syrup
- vanilla extract
- full fat coconut milk
- crushed chocolate cream stuffed cookies

when it comes to storing these gems, we opt for the freezer and just let them thaw before we eat them!
you could also store the bars in the fridge, it’s just totally a texture preference in my opinion. they’re pretty portable too! but the longer the bars sit out, the softer they get.
also, i know that i’m going to get flour substitution questions, so sub at your own risk because this is the only way i’ve made the bars ๐
if you do choose to use another flour, the other ingredients will need adjusting because coconut and almond flour are very particular!

No Bake Cookies and Cream Bars

1 and 1/2 cups almond flour
1/2 cup coconut flour
1/3 cup + 1 tbsp maple syrup
1 tsp vanilla extract
1/3 cup full fat coconut milk (make sure it’s full fat)
3/4 cup crushed chocolate cream filled cookies (see text for brand)
Directions
- mix all but the cookies together until a thick dough forms. then, add in the crushed cookies and fold them in as much as possible.
- spread out in a parchment paper lined bread loaf pan and place in the freezer for about an hour to set.
- cut into bars or squares and enjoy!! you can store the bars in the fridge or freezer in an airtight container and just thaw before eating.
