y’all, it’s a good day to devour some fudgy and decadent Vegan and Gluten-Free Peanut Butter Cup Banana Cake.
cakes like this only come once in a lifetime, i mean it’s vegan, gluten-free and better than the delicious ones we get at bakeries. it’s very hard not to eat the entire thing at once, so i warned you.
basically, this is fudgy and moist banana bread but with a peanut butter twist and chocolate chips.
to make this really indulgent and extra peanut buttery, i added some peanut butter cups.
that’s completely optional though as Vegan and Gluten-Free Peanut Butter Cup Banana Cake will already have a peanut butter taste from the peanut butter in the batter.
Vegan and Gluten-Free Peanut Butter Cup Banana Cake is made with a base of almond flour and gluten free 1:1 baking flour.
since i have only tried the recipe with those two flours, i highly recommend not making substitutions.
of course you’re welcome to experiment, but know the cake texture will not turn out the exact same with other flours.
that frosting on the top, it’s simple mills vanilla frosting, which if you haven’t noticed by now, i am obsessed! you can totally make your own or omit it altogether though, the cake is outstanding on it’s own.
this is a one bowl recipe, which we looooove, right?! no mess and no fuss. the cake holds together super nicely yet it’s fudgy. a total dream combo.

Vegan and Gluten-Free Peanut Butter Cup Banana CakeCourse: Cakes, DessertsDifficulty: Easy
1 cup almond flour
1/2 cup gluten free 1:1 baking flour
1 tsp baking powder
3 smaller overripe bananas mashed
1/3 cup very creamy peanut butter
2 tbsp maple syrup
1/3 cup almond milk
1 tsp vanilla extract
1/3 cup mini chocolate chips
3/4 cup chopped peanut butter cups
- store bought vanilla frosting for topping
- preheat the oven to 350 degrees.
- mix the cake ingredients until a thick batter forms and then fold in the chocolate chips and peanut butter cups.
- add to an 8 x 8 inch cake pan. bake at 350 degrees for 30 minutes.
- cool down completely, add frosting and enjoy! store in the fridge in an airtight container.
