Healthy Vegan Snickerdoodle Cake

it’s friday eve, and we HAVE to celebrate with something super scrumptious, like Healthy Vegan Snickerdoodle Cake! it’s one of the easiest recipes to make and you’re going to LOVE the taste and texture. there’s a classic cinnamon sugar topping and i used coconut sugar.

there’s honestly a good chance that you have all of the necessary ingredients for this cake in your fridge and pantry.

if you’re a baker, especially of vegan goods, the ingredients you need are staples.

from gluten free all purpose flour to applesauce, everything is deliciously wholesome.

the base of the cake is made with gluten free all purpose flour and almond flour.

i don’t recommend making any subs because this is the only way i tested the cake and baking is very precise.

for example, if you replace gluten free all purpose flour with coconut flour, it would absolutely destroy the cake.

that’s why subs often don’t work out but if you feel compelled to experiment, then go for it bearing that in mind!

Healthy Vegan Snickerdoodle Cake isn’t super sweet as it’s made with coconut sugar, which has a lower glycemic index.

personally, it’s plenty sweet for me, but maybe you’ll need a drizzle of maple syrup on top after you bake the cake.

that would be really yummy actually! you could top with one of two things- a glaze to give it cinnamon rolls vibes, OR nut butter.

i am personally obsessed with anything snickerdoodle and peanut butter, so you know that’s what i went with.

you don’t even have to add a glaze or nut butter at the end, both just make the cake more satisfying and appealing.

the cake was baked in an 8 inch round pan, but you could also use a square one.

instead of cake, you could even turn this recipe into cookies! you would just have to bake the cookies less time. the cake bakes for 25 minutes, so start out the cookies at 12ish minutes and adjust from there.

if they’re thick ones, my guess is the cookies will take about 12-15 min to bake. such a fun holiday treat and a nice break from classic sugar cookies.

Ingredients

  • 1 cup + 3 tbsp gluten free all purpose flour

  • 1 cup almond flour

  • 1 tsp baking powder

  • 1/3 cup coconut sugar


  • 1/2 tbsp cinnamon

  • 1 flax egg (1 tbsp flax meal +3 tbsp water)

  • 1/3 cup applesauce

  • 1 tsp vanilla extract


  • 1/2 cup unsweetened dairy free milk

  • coconut sugar and cinnamon for topping (2-3 tbsp coconut sugar + 1/2 tsp cinnamon)

Directions

  • preheat the oven to 350 degrees.
  • mix the cake ingredients together in a bowl until a thick mixture forms. transfer to a greased 8 x 8 cake pan.
  • top with the cinnamon sugar mixture and bake at 350 degrees for 23-25 minutes.
  • top with a glaze or runny peanut butter and enjoy!
  • store in the fridge or freezer in an airtight container.
