Fudgy Vegan Brookie Cake Bread

sometimes there are no words for things, and it was hard to find them while shoveling Fudgy Vegan Brookie Cake Bread into my mouth. there’s good desserts and then there’s GOOD desserts, count this as the latter. from the out of this world fudgy texture to the indulgent taste, there’s nothing not to love.

ok, which layer do i start with it? the fudgy brownie one? the ooey gooey cookie dough one, OR the frosting one.

let’s start with the beginning, so the brownie layer.

it’s made with almond flour, peanut butter, maple syrup and some other goodies that you very likely have sitting in your pantry.

the cookie dough layer is also really easy and really simple. there’s ingredient overlap in both of the layers too.

the cookie dough layer is made with predominately oat flour while the brownies are made with mostly almond flour.

it adds good balance and a little mix up when it comes to the texture.

by the way, if you don’t like ultra fudgy desserts, then i’m not sure this is the one for you. just look at the pics for reference haha, i mean it’s FUDGY.

you will probably need a fork. while this holds up well (you can pick up the slices), they are delicate due to the texture.

idk how anyone could not enjoy a warm, soft, beyond cozy and delicious sweet treat like this though, Fudgy Vegan Brookie Cake Bread is honestly a dream.

guess what, you can also make this into cupcakes/muffins if you don’t want to use a bread loaf pan! you would just do everything the same except line muffin cups with the layers instead.

then, once the Fudgy Vegan Brookie Cake Bread cools down COMPLETELY (this is super important), then you can add frosting.

while you’re more than welcome to make homemade frosting, i went with store-bought.

Simple Mills and Miss Jones both have some great vegan options and i know there’s definitely other brands too.

Ingredients

  • brownie layer
  • 1 and 1/2 cups almond flour

  • 1 tsp baking powder

  • 1/3 cup cocoa powder

  • 1/3 cup runny peanut butter (used crunchy)

  • 1/3 cup unsweetened dairy free milk

  • 1/3 cup maple syrup

  • 1/2 tbsp vanilla extract

  • cookie layer
  • 1Β cup oat flourΒ 

  • 1/4 cup almond flour

  • 1/3 cup almond milk

  • 1/4 cup maple syrup

  • 1 tsp almond extract

  • 1/3 cup runny peanut butter

  • 1/3 cup vegan mini chocolate chips

  • store bought vanilla frosting

Directions

  • preheat the oven to 350 degrees.mix the brownie layer ingredients in a bowl until a thick batter forms. place in a bread loaf pan lined with parchment paper or greased.
  • then, mix the cookie layer and spread on top of the brownie layer. bake at 350 degrees for 30 minutes.
  • let the loaf cool down COMPLETELY before adding any frosting to the top or cutting into it. NOTE-this cake bread is super fudgy and moist.
  • store in the fridge or freezer in an airtight container and enjoy!
