Vegan and Gluten Free Coffee Cake Bread

delicious, scrumptious, vegan and gluten free coffee cake…but make it THICK and fluffy bread. oh my goodness, this is one of the best recipes on the blog and you’re going to be shocked that it’s both vegan and gluten-free. the bread is dense yet also fluffy as can be. the taste is 10/10 and better than anything you’ll find at a cafe.

treat yourself to breakfast, or just a good dessert. this is light enough to be perfect for breakfast but decadent enough as a treat.

this gem took like 4 tries but look where we’re at now. it’s total perfection in every department and i am SO excited for you to try.

so, as for flour, you’re going to need all purpose gluten-free flour.

it’s the only way that i have made this bread, so there aren’t any subs i recommend.

the base is really simple but so is the cinnamon sugar streusel topping. it’s only made with a few ingredients!

you crumble the cinnamon streusel on top of the bread loaf before it bakes and it rises into absolute perfection.

a glaze on the top is optional, but i do recommend and it’s so yummy and really brings the entire dish together.

you can make a simple one with vegan cream cheese that’s room temp, dairy free milk and some powdered sugar, cane sugar or a sugar sub.

this loaf is really thick, so just bear that in mind when you’re cutting it into slices. the bread stays together really well, but it’s not super sturdy.

Vegan and Gluten Free Coffee Cake Bread is seriously perfection served with a little bit of vegan butter and a cup of coffee in the morning.

to be honest, i can’t think of anything better or more peaceful than to relax with those goodies.

  • gluten free all purpose flour

  • baking powder

  • baking soda

  • almond butter
  • coconut yogurt

  • organic coconut sugar

  • vanilla extract
  • maple syrup

  • apple cider vinegar, red wine vinegar or rice vinegar

  • dairy free milk
  • cinnamon

  • vegan butter

Vegan and Gluten Free Coffee Cake Bread

Cooking time



6-7 slices


  • coffee cake bread
  • 2 and 1/3 cups gluten free all purpose flour

  • 1/4 cup coconut sugar

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 2 tsp vanilla extract

  • 1/3 cup maple syrup

  • 1/3 cup coconut yogurt

  • 1/2 tbsp apple cider vinegar

  • 1 and 1/2 cup almond milk

  • 1/3 cup almond butter

  • cinnamon streusel topping
  • 1/2 cup gf all purpose flour

  • 1/3 cup coconut sugar

  • 1 tbsp cinnamon

  • 1/3 cup melted vegan butter

  • 1/2 tbsp vanilla extract

  • optional glaze
  • coconut butter


  • preheat the oven 350 degrees.
  • mix the coffee cake bread ingredients until a thick batter forms. pour into a greased bread loaf pan.
  • then, combine the streusel ingredients in a bowl with a fork until a grainy consistency.
  • add to the top of the batter and bake at 350 degrees for 1 hour. cool down completely before cutting into slices. add a glaze to the top if you would like!
  • store in the fridge or freezer in an airtight container and enjoy!
