it’s the weekend, so pancakes are a must right?! Vegan Banana Nut Pancakes are gems made in the food processor, have no added sugar AND you get to bake them! so much less of a mess and all of the pancakes are ready at once. that sounds wonderful, doesn’t it?
there’s loads of almonds, deliciously sweet bananas, oat flour, almond milk, and dates. can you believe that you only need FIVE ingredients?!
i was able to make 9 medium size pancakes, but you can always makes yours smaller! just make sure you monitor the baking time.
for the pictures, i flipped them over so the smooth side was showing. Vegan Banana Nut Pancakes closely resemble fluffy cookies, so i guess you could take that route too. grab some sprinkles and healthier frosting like simple mills, and you have the best cookies ever. kind of drooling now.
like i said, you just add everything to a blender and blend on high until a thick batter forms. make sure the almonds are blended enough so the texture is somewhat grainy- so you don’t end up with big chunks of them!
the batter is liquid-y enough for you to take a big spoonful and add the batter right onto a parchment lined baking tray. just use the spoon to flatten the batter into a pancake/ form a circle.

Vegan Banana Nut PancakesCourse: BreakfastDifficulty: Easy
1 cup oat flour
2 large very ripe bananas (if yours are smaller then try 3)
1 cup almonds (i used dry roasted ones)
2 large pitted medjool dates
1/2 cup unsweetened almond milk (or any dairy free should be fine)
- add all ingredients to a food processor and blend until a smooth batter forms. the consistency should be kind of grainy because of the almonds.
- use a large spoon to place on a parchment lined baking tray. use the spoon the slightly flatten/shape into circles.
- bake at 350 degrees for 15 minutes.
- add your favorite toppings and enjoy!!
