Vegan Gingerbread French Toast

gingerbread is the best flavor and when you add it to french toast, you have yourself a recipe for culinary bliss.

Vegan Gingerbread French Toast is super easy to make and you can tailor the amount to your needs.

if you’re making this for a very large crowd, double the recipe!

the batter for Vegan Gingerbread French Toast is made with simple ingredients that you likely already have sitting in your pantry and fridge.

you may need molasses since that tends to be a more seasonal ingredient, but you can find it at just about every grocery store.

the batter is made with dairy free milk, molasses, tapioca flour, oat flour, maple syrup, cinnamon, nutmeg, ground cloves and ground ginger.

it’s simple, has the perfect amount of sweetness and creates a fabulous coating on the outside of the bread.

the molasses and maple syrup makes the bread a little sticky and caramelizes the outside, which is just divine.

you can top Vegan Gingerbread French Toast with anything! i went with powdered sugar, maple syrup and some cinnamon butter, which is Monty’s brand.

as far as choosing a bread for the french toast, my absolute favorite kind of bread is sourdough, which is what i used here!

feel free to use what you have on hand, but i do suggest using a very sturdy and hearty bread.

the sourdough i used was a few days old too.

Vegan Gingerbread French Toast

yields enough batter to make another 2-4 french toasts (6-8 pieces total)

Ingredients

  • 6-8 slices of sourdough bread (used trader joe’s brand)
  • batter
  • 1 cup dairy free milk

  • 2 tbsp maple syrup

  • 1/4 cup molasses

  • 1 tbsp tapioca flour

  • 1/4 cup oat flour

  • 1 tsp cinnamon

  • 1/4 tsp nutmeg

  • 1/4 tsp ground cloves

  • 1/4 tsp ground ginger

Directions

  • mix the batter ingredients together as well as you can. if there are some flour lumps, that’s OK. try to remove them or rub in the bread before placing in the frying pan.
  • set each piece of bread in the batter and coat it well.
  • place on a non stick frying pan with cooking oil to ensure no sticking whatsoever. cook on medium heat for about two minutes on each side or until golden brown.
  • serve with your favorite toppings and enjoy! best eaten right away!
