as a baked oats recipe, there is definitely a yummy semi-fudgy texture.
the texture is in between cake and oatmeal! the baked oats are sturdy enough to cut into bars, and that’s what i recommend doing.
this way, you will have 9 pretty hearty slices for the week.

there’s also a homemade cashew frosting that’s made with just cashews, maple syrup, almond milk and vanilla extract.
to add more bulk to your breakfast, you can add some banana slices on the side, some vegan yogurt, nut butter or honestly, anything you want.
Healthy Vegan Carrot Cake Baked Oats will go well with anything and everything. for that little bit of extra sweetness, add a drizzle of maple syrup.
in the recipe itself, there’s 1/3 cup of maple syrup, so not that much at all. the spices, raisins and carrots bring out some sweetness too.

the spices that i used are cardamom, cinnamon, ginger and nutmeg, which i all highly recommend you use.
this brings the baked oats the flavor it needs to feel oh so decadent and satisfying.
also, to really bring out the flavor, you’re going to use vanilla extract in both the baked oats and the frosting.

the baked oats and the frosting are super easy to make because you make both in a blender or food processor.
for the oats, i just added everything to a blender and blended until a smooth texture formed.
then, you fold in the walnuts, raisins and grated carrots.
also, PRO TIP that you must try- don’t grate carrots by hand. instead, add them to a food processor and grind on high until you get a grated texture.
it’s soooo much easier and saves loads of time!

- oats (i used one degree organics sprouts oats)
- vegan yogurt (forager is what i used and kite hill works well too)
- nut butter- used almond butter
- baking powder
- maple syrup
- coconut oil
- vanilla extract
- dairy free milk

2 and 1/2 cup old fashioned oats (see text for brand)
1 tsp baking powder
1/2 tbsp cinnamon
1/2 tsp ground ginger
1 tsp cardamom
1/4 tsp nutmeg
1/3 cup maple syrup
1/2 cup dairy free yogurt
1/3 cup room temp coconut oil
1/2 tbsp vanilla extract
1 cup dairy free milk
1/3 cup creamy nut butter
1/2 cup chopped walnuts
1/2 cup raisins
1 and 1/4 cup grated carrot
- cashew frosting
1 cup raw cashews soaked for 2 hours in hot water and drained
2 tbsp maple syrup
1/2 cup dairy free milk
1/2 tsp vanilla extract
Directions
- preheat the oven to 350 degrees.
- add all but the raisins, carrots and walnuts to a blender and blend until a smooth batter forms.
- transfer to a bowl and fold in the raisins, carrots and walnuts.
- transfer to a parchment lined 8 x 11 baking pan. bake at 350 degrees for 33-35 minutes.
- blend the frosting ingredients in a food processor or blender. add to the top of the cooled baked oats and cut into bars.
- store in the fridge or freezer in an airtight container.
