Ingredients
  

  • 3 very ripe bananas mashed (about 1 ¼ cups)
  • 2 large eggs
  • ½ cup plain Greek yogurt or dairy-free Greek-style yogurt
  • ½ cup natural almond butter cashew butter, pecan butter or peanut butter
  • cup pure maple syrup
  • 1 tsp vanilla extract
  • 1 ¾ cups gluten-free oat flour
  • ¼ cup almond flour
  • 2 tbsp flax meal
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp sea salt
  • 1 ½ tsp cinnamon
  • ¾ cup chopped pecans plus more for topping if desired
  • Optional Frosting (store-bought like Miss Jones)
  • ½ cup cream cheese or dairy-free cream cheese
  • 1 –2 tbsp pure maple syrup
  • ½ tsp vanilla extract
  • Pinch of cinnamon optional

Method
 

  1. Preheat the oven to 350°F. Line a 1 lb loaf pan with parchment paper or lightly grease it.
  2. In a large bowl, whisk together the mashed bananas, eggs, Greek yogurt, nut butter, maple syrup and vanilla until well combined.
  3. Add the oat flour, almond flour, flax meal, baking powder, baking soda, sea salt and cinnamon. Stir just until combined, being careful not to overmix.
  4. Fold in the chopped pecans, reserving a small amount for the top if desired.
  5. Pour the batter into the prepared loaf pan and smooth the top. Sprinkle with the reserved pecans.
  6. Bake for 52-55 minutes, loosely tenting with foil after about 40 minutes if the top begins to brown too quickly.
  7. The bread is done when a toothpick inserted into the center comes out clean or with a few moist crumbs, or the internal temperature reaches 200–205°F.
  8. Let the loaf cool in the pan for 20 minutes, then transfer to a wire rack to cool completely before slicing.
  9. If making the frosting, mix the cream cheese, maple syrup, vanilla and cinnamon until smooth. Spread over the completely cooled loaf and top with additional chopped pecans if desired.
