happy friday!! oh my goodness, i am one happy slice of banana bread because my husband is off this weekend for the first time in two whole months. to celebrate, we’re having all of the Nourishing Vegan and Gluten-free Banana Bread. once you try a slice, you’ll see why this is the best.
between the light, yet dense, and fudgy texture + the incredible taste, you will have this recipe on repeat.
i feel like it’s hard to find a good vegan banana that’s also gluten-free. well, yay, this is it! as far as most of my banana creations go, i typically donโt add more sugar but this time, i wantedย to add just a couple of tbsp of maple syrup!
it really makes a huge difference! if you want to omit it, that’s fine, just add a couple tbsp of almond milk.

make sure the bananas you use are REALLY ripe, as in overripe to ensure an optimal level of sweetness. this is key to making the bread taste more decadent than it is.
a little bit of cinnamon seems to bring out the sweetness too, and i love adding some to anything banana.
oh, i have to tell ya what i recommend serving the bread with- vegan butter and a lil drizzle of maple syrup. it is honestly just heavenly!
you could also add some nut butter, i mean banana and peanut butter are kind of the best combo of all time.

make sure your bananas are about medium sized and like i said, overripe.
you can mash the bananas with a fork or potato masher and then add in all of the other wet ingredients before you mix in the dry ones.
the batter is going to be pretty thick by the way, so know that’s totally fine!
as far as add-ins go, i didn’t use any this time around but go for it if you want to! chocolate chips, walnuts, blueberries and beyond, i mean the options are endless.

here’s what you need to make Nourishing Vegan and Gluten-free Banana Bread!
- mashed overripe bananas
- gluten-free all purpose flour
- baking powder
- extra virgin olive oil
- coconut yogurt
- flax eggs
- apple cider vinegar
- vanilla extract
- cinnamon
- maple syrup

as far as the flour goes, i used Trader Joe’s gluten-free all purpose flour blend, so just make sure that whatever you use is the same blend!
you could totally try other ones, just can’t guarantee that the bread will turn out the same.
for coconut yogurt, i used kite hill creamy coconut yogurt, and you want to use a brand with a comparable texture! so delicious brand would also be a good option.
in terms of sweetness, if you do want your banana bread a little on the sweeter side since this is mildly sweet, i recommend drizzling some maple syrup on the finished product.
if you add more to the batter, you could end up changing the texture!

Ingredients
2 medium sized overripe mashed bananas
2 tbsp maple syrup
1/2 tbsp vanilla extract
2 tbsp extra virgin olive oil or avocado oil
2 flax eggs (2 tbsp flax meal + 6 tbsp water)
1/4 cup creamy coconut yogurt
1 tsp apple cider vinegar
1/2 tbsp baking powder
1 and 1/2 cups gluten-free all purpose flour
1/2 tsp cinnamon
Directions
- preheat the oven to 350 degrees.
- mix the wet ingredients in a bowl and then add in the dry ones. combine well until a smooth and thick batter forms.
- add to a bread loaf pan and bake at 350 degrees for 48 minutes.
- let the bread cool completely so it sets and then cut into slices. store in the fridge or freezer in an airtight container and enjoy!
