hi! your favorite childhood treat is calling, but ya know, it got an upgrade! these No Bake Cosmic Brownie Cups are the most delicious dessert on the block!

if you loved Cosmic Brownies as a kid, then you’re going to love these bite-sized treats!

the brownies are super easy to make and so good! since they’re no bake, they last quite a bit in the freezer and if you let them thaw a bit, the brownie part becomes so fudgy.

if you have kiddos at home, then they’re going to love these too!

the base of the brownie cups has cocoa powder, vanilla extract, and a little bit of maple syrup to sweeten it up more!

however, the main form of sweetness comes from medjool dates. not only are the dates important for sweetness, but they’re also crucial to achieve the fudgy texture.

the base layer can be made in a food processor. then, i added it into parchment paper muffin cups to make the perfect size and shape for them!

i added a chocolate coating on the top with sprinkles, too!

while the sprinkles really help with replicating the original Cosmic Brownies, the brownie part tastes very similar to the original too.

however, you can always omit them if you don’t like them!

Ingredients

  • 1 cup almond flour

  • 1/3 cup flax meal

  • 1/3 cup runny almond butter

  • 3/4 cup medjool dates

  • 1/3 cup cocoa powder

  • 1/3 cup dairy free milk

  • 1 tsp vanilla extract

  • 1/8 cup maple syrup

  • chocolate coating
  • 3/4 cup chocolate chips

  • 1 tbsp coconut oil

  • sprinkles for topping

Directions

  • mix the base layer ingredients in a food processor until a thick dough forms.
  • add the mixture into parchment paper muffin cups.
  • pour melted chocolate on top and then add some sprinkles.
  • place in the freezer to set for an hour and enjoy!
  • thaw a bit before eating and store in the freezer.
