Vegan and Gluten-Free Banana Bread Cake

oh my GOODNESS, this is going to borderline break the internet because it’s honestly the best cake i’ve ever had. the cake itself is basically banana bread- it’s dense, sweet, packed with flavor and incredibly easy to make. oh and then the buttercream, it’s fabulous too.

you won’t even believe how good this cake is until you try it. i have made banana bread a million different ways but i stepped it up a notch here.

the cake is so darn scrumptious and will leave you feeling super satisfied.

you don’t even need the frosting because the vegan banana bread cake is good enough on it’s own.

it’s sweet too as it’s made with overripe bananas and also a few tbsp of maple syrup.

however, if you’re looking for that extra bit of decadence, i recommend the frosting. it would be really perfect for a special occasion.

the vegan buttercream is made with two sticks of vegan butter and you can use any brand that you want!

i went with country crock avocado oil vegan butter, but there are many brands to choose from.

you want the vegan butter to be on the colder side but not too cool. leave it out on the counter for 10 minutes before hand.

also, you’re going to need vegan powdered sugar, and i recommend Florida Crystals brand because it’s vegan and USDA organic.

lastly, you’re going to need vanilla bean paste. i love seeing the real vanilla bean speckles in the frosting.

if you don’t have any or just can’t find some, vanilla extract works.

here are the ingredients you need to make Vegan and Gluten-Free Banana Bread Cake!

  • 1 and 1/2 cups almond flour

  • 1 tsp baking powder

  • 1/4 cup arrowroot

  • 1/2 cup all purpose gluten free flour (used Trader Joe’s brand)

  • 1 and 1/3 cup mashed very ripe bananas

  • 1/2 cup dairy free milk

  • 1 tbsp vanilla extract

  • 3 tbsp maple syrup

  • 1/2 cup very creamy almond butter

  • 1/2 tsp pumpkin spice

  • 1/2 tbsp cinnamon

  • 1/4 tsp nutmeg

easy right? it is! as far as subs go, i can’t say that i have made this any other way, so just sub at your own risk :).

Ingredients

  • 1 and 1/2 cups almond flour

  • 1/2 cup gluten free all purpose flour

  • 1 tsp baking powder

  • 1/4 cup arrowroot powder

  • 1/2 tsp pumpkin spice

  • 1/2 tsp cinnamon

  • 1/4 tsp nutmeg

  • 3 tbsp maple syrup

  • 1/2 cup dairy free milk

  • 1 and 1/3 cup mashed overripe banana

  • 1/2 cup runny almond butter

  • 1 tbsp vanilla extract

  • buttercream
  • 2 sticks vegan butter

  • 1 cup powdered sugar

  • 1 tsp vanilla bean paste

Directions

  • preheat the oven to 350 degrees.
  • mash the banana and mix all ingredients in a bowl until a batter forms and everything is well-combined!
  • bake in a cake pan (8×8) at 350 for 40 minutes.
  • for the buttercream, add all ingredients to a food processor and blend until a super smooth consistency forms.
  • let the cake cool COMPLETELY and then add the buttercream.
  • store in the fridge in an airtight container and enjoy!
