Vegan Peanut Butter Pretzel Chocolate Bars are out of control delicious and made with a peanut butter, pretzel and date base.

i am truly surprised the bars actually became a finished product because i kept eating the base, ha.

the center is just a simple peanut butter, maple syrup, coconut flour and coconut oil filling.

it’s simple and brings the bottom and top layer flavors together.

lastly, the top layer is just melted chocolate chips! i opted for a lower sugar one that is sweetened with coconut sugar.

the salty component from the pretzels is beyond delicious truly what pulls this recipe together.

while Vegan Peanut Butter Pretzel Chocolate Bars aren’t too sweet, they still need that salty touch from the pretzels.

dairy free milk

coconut oil

medjool dates

vanilla extract

coconut flour

that’s all you need! how easy is that? there’s so much overlap with ingredients and you can find them at every grocery store.

the bars are wholesome but decadent enough where they taste like candy bars.

take them to your next party or just prep a batch to keep in the freezer for when the sweet tooth hits.

Vegan Peanut Butter Pretzel Chocolate Bars

Ingredients

  • base layer
  • 3 cups pretzels

  • 1/3 cup runny peanut butter

  • 1 cup pitted medjool dates

  • 1/3 cup dairy free milk

  • peanut butter filling
  • 1/2 cup runny peanut butter

  • 2 tbsp maple syrup

  • 4 tbsp melted coconut oil

  • 1 tsp vanilla extract

  • 3 tbsp coconut flour

  • 1 and 1/4 cup chocolate chips melted

Directions

  • add all base layer ingredients to a food processor and blend until a sticky and grainy consistency forms.
  • then, add to a parchment lined bread loaf pan.
  • mix the peanut butter filling ingredients and pour over the base layer.
  • freeze for several hours, cut into bars and then drizzle with the chocolate once it cools.
  • store in the freezer in an airtight container and thaw a bit before eating.
