HAPPY WEEKEND! let’s start our weekend with the best of the best, Peanut Butter Banana and Chocolate Chip Baked Oats! oh my goodness, this is THE breakfast of champs but also makes a perfect snack or dessert. the baked oats are chewy goodness that you can easily cut into bars.
you won’t believe how simple and minimal the ingredients are! you very likely have everything at home if you’re a baker.
if not, everything can be found at all grocery stores, so a quick trip is no big deal. it’s worth it too!

you’re going to need some overripe bananas, so hopefully you have a few sitting on your counter.
if you’re not a fan of peanut butter, then you just use another nut or seed butter. my next recommendation would be almond butter.
to make this a nut free recipe, you can just use dairy free milk that’s not nut based and instead of peanut butter, you can use sunbutter.
you also have to make sure that the chocolate chips don’t have nut or nut traces in them, just check labels!

we don’t use almond flour in this recipe either, it’s gluten free all purpose flour. not gluten free baking flour by the way, just all purpose.
huge fan over here of providing y’all with gluten free recipes because it seems like that’s what most people prefer!
the recipe only calls for 4 tbsp of gluten free all purpose flour, but it’s important because that’s what will hold everything together.

here is everything you need to make Peanut Butter Banana and Chocolate Chip Baked Oats!
- overripe bananas
- runny peanut butter (Trader Joe’s brand, Whole Foods or crazy Richard’s)
- maple syrup
- dairy free milk
- vanilla extract
- old fashioned oats
- gluten free all purpose flour
- mini chocolate chips
easy as can be right?! like i said you probably do have everything in your pantry too.

also, as with many of my recipes, you can change up your add-ins.
if you don’t want to use mini chocolate chips, you can switch it up maybe with blueberries or something else.
that’s not even necessary though, you don’t need to add in anything else, the peanut butter and banana combination is amazing as is.
however, peanut butter, banana and chocolate is just a trio that most cannot refuse, including myself.
i mean, just LOOK at that oooooey, goooooey goodness, holy deliciousness. the texture is out of this world.
it’s sturdy enough to cut into bars for sure, but you’re going to want to eat this with a fork. the oat bake is delicate, and thus, softer like oatmeal.

Peanut Butter Banana and Chocolate Chip Baked Oats

3 medium size overripe bananas mashed
1/2 cup runny peanut butter
1/4 cup maple syrup
1/2 cup dairy free milk
1 tsp vanilla extract
1 tsp baking powder
4 tbsp gluten free all purpose flour
3 cups old fashioned oats
1/3 cup mini vegan chocolate chips (or however much you want)
Directions
- preheat the oven to 350 degrees.
- add the wet ingredients to a bowl, mix well and then fold in the dry ones.
- fold in the chocolate chips until mixture is well-combined.
- add to an 8 x 11 greased baking pan and evenly distribute.
- bake at 350 degrees for 25 minutes and enjoy!
- store in the fridge or freezer in an airtight container.
