medium mashed overripe bananas
⅓

coconut yogurt
2 flax eggs (2 tbsp flax meal + 6 tbsp water and let it set for 5 min)
½
tbsp
vanilla extract
1 tbsp baking powder
1/4 cup coconut sugar
1/2 tsp cinnamon
1 cup gluten-free all purpose flour
1 cup almond flour
1/2 cup chocolate chips
frosting
3/4 cup room temp vegan cream cheese
1/2 cup chocolate chips melted with 2 tbsp vegan butter or coconut oil
1/4 cup powdered sugar
Instructions
preheat the oven to 350 degrees.
mix the cookie cake ingredients and fold in the chocolate chips. add to a very well greased or parchment lined 8 x 8 baking tray.
bake at 350 for 37 minutes and let it cool down completely.
whisk the frosting ingredients together and place in the fridge to set 10 min or so. frost the cake and enjoy!
store in the fridge in an airtight container.
