Ingredients

  • 1 cup gluten-free oats (We used One Degree Organics)
    1/2 cup almond flour
    3 medium to large very ripe bananas
    1/3 cup pumpkin puree
    1/3 cup creamy almond butter (You can use any nut or seed butter of your choice)
    1.5 tsp pumpkin spice blend
    1 tsp baking powder
    1/3 tsp almond or vanilla extract

Directions

  • Preheat and Prepare: Begin by preheating your oven to 350°F (175°C). Grease a bread loaf pan and line it with parchment paper, leaving some overhang on the sides for easy removal.
  • Combine the Dry Ingredients: In a food processor, add 1 cup of gluten-free oats and 1/2 cup of almond flour. Pulse until you achieve a fine flour-like consistency. This blend provides a gluten-free and nutrient-rich base for your cake.
  • Blend Wet Ingredients: To the oat and almond flour mixture, add 3 medium to large very ripe bananas, 1/3 cup of pumpkin puree, 1/3 cup of creamy almond butter, 1.5 tsp of pumpkin spice blend, 1 tsp of baking powder, and 1/3 tsp of almond or vanilla extract.

  • Blend Until Smooth: Process all the ingredients in the food processor until a thick, velvety batter forms. This may take a minute or two, and you’ll notice the delightful aroma of pumpkin spice filling your kitchen.

  • Transfer to the Pan: Pour the cake batter into your prepared loaf pan, spreading it out evenly. If you desire that extra layer of flavor and crunch, sprinkle some pecans on top or cinnamon sugar.

  • Bake to Perfection: Place the pan in the preheated oven and bake for approximately 43 minutes. Keep an eye on it, as baking times can vary slightly depending on your oven.
