Ingredients

  • 1/2 cup oat flour
  • 1/2 cup almond flour
  • 1 tsp baking powder
  • 1/3 cup creamy almond butter
  • 1/3 cup pumpkin puree
  • 1/3 cup maple syrup
  • 1/3 cup dairy free milk
  • 1 tsp vanilla bean paste
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp allspice

store bought vanilla frosting (see text for brands)

Instructions

  • preheat the oven to 350 degrees.
  • mix the wet ingredients in a large bowl and then add in the dry ones. combine well until the mixture is smooth.
  • place about one heaping tbsp full in mini muffin/cupcake parchment cups and bake at 350 degrees for 15-17 minutes. slight time variation will depend on size.
  • let the cupcakes cool completely before you frost them and enjoy!
