hey hey hey happy Wednesday! today, i present to you a fall themed recipe that’s honestly perfect for any time of year. Vegan Cinnamon Apple Baked Oat bars are super healthy and made with yummy oats, coconut yogurt, apple juice and more. they’re everything you need in a balanced bar.
idk about you, but i am having all of the cinnamon apple cravings lately, which is perfect for fall.
i adore baked oats and picked up some organic apple juice at the grocery store, which prompted me to use it for something other than sipping on.
honestly, it adds such good flavor to the baked oats and makes them super moist!

the apple juice has no added sugar, which is great because i used a little bit of maple syrup and then there’s cinnamon coconut sugar on top!
there’s just a perfect amount of sweetness- great for breakfast but the bars also feel like a treat for dessert or something!
you can always add real icing to the top, i just went with some drizzles of coconut yogurt and it’s so scrumptious.

all in all, Vegan Cinnamon Apple Baked Oat bars can be ready within about 30 minutes, including prep time!
the bars bake in the oven for 25 minutes at 350 degrees and while they’re soft, they stay together well.
i mean, they’re not super sturdy but you can definitely pick them up and eat like you would any other bar.

while the bars are amazing fresh out of the oven, they do make fabulous meal prep when it comes to breakfast for the week!
you can easily store them in the fridge or freezer in an airtight container! maybe just hold off on icing until you’re ready to eat each piece.
if you want to incorporate some add ins, that would totally work! banana, blueberries, and even chocolate chips would be so yum.
if you do add chocolate chips, i would just omit the cinnamon in the bars and on top, unless chocolate and cinnamon sounds good to you lol.

Vegan Cinnamon Apple Baked Oat bars

1 and 1/2 cups old fashioned oats
3/4 cup oat flour
1 tsp baking powder
1/2 tbsp cinnamon
1 cup apple juice with no added sugar
1/4 cup creamy dairy free yogurt (i used coco June)
1/8 cup maple syrup
1/4 cup creamy almond butter or peanut butter
1 tsp vanilla extract
- cinnamon/sugar for topping
3-4 tbsp coconut sugar
1/2 tsp cinnamon
Directions
- preheat the oven to 350 degrees.
- mix all dry ingredients in a large bowl and then add in the wet ones. add the batter to an 8 x 11 baking pan. add the cinnamon sugar to the top.
- bake at 350 degrees for 25 minutes and cool down completely before adding any icing (i just used coconut yogurt).
- store in the fridge or freezer in an airtight container and enjoy.
