full fat coconut milk

chia seeds

vanilla extract

dairy free milk

chia seeds

medjool dates

almond butter

toasted coconut

dairy free unsweetened chocolate

first, you make the chia pudding and let that set in the fridge for at least 3-4 hours.

then, it will be nice and firm, and ready for the medjool date caramel!

lastly, drizzle the chocolate on top, sprinkle with toasted coconut and let it set in the freezer.

Healthy Vegan Samoas Chia Pudding (No Added Sugar)

Ingredients

  • chia pudding
  • 1/2 cup full fat coconut milk

  • 1/2 cup almond milk

  • 3 tbsp chia seeds

  • date caramel
  • 5-6 medjool dates

  • 2 tbsp runny almond butter

  • 1/4-1/3 cup dairy free milk

  • 1 tsp vanilla extract

  • one melted unsweetened chocolate bar and toasted coconut shreds

Directions

  • mix the chia pudding ingredients and place in the fridge for at least 3-4 hours.
  • blend the date caramel ingredients in a food processor until a thick paste forms.
  • add to the top of the chia pudding after it has set and then top with the melted chocolate. sprinkle coconut shreds on top and freeze for 30 minutes. enjoy!
