Healthy Vegan Samoas Chia Pudding (No Added Sugar)

- chia pudding
1/2 cup full fat coconut milk
1/2 cup almond milk
3 tbsp chia seeds
- date caramel
5-6 medjool dates
2 tbsp runny almond butter
1/4-1/3 cup dairy free milk
1 tsp vanilla extract
- one melted unsweetened chocolate bar and toasted coconut shreds
Directions
- mix the chia pudding ingredients and place in the fridge for at least 3-4 hours.
- blend the date caramel ingredients in a food processor until a thick paste forms.
- add to the top of the chia pudding after it has set and then top with the melted chocolate. sprinkle coconut shreds on top and freeze for 30 minutes. enjoy!
