Ingredients
chia pudding
1/2 cup full fat coconut milk
1/2 cup almond milk
3 tbsp chia seeds
date caramel
5-6 medjool dates
2 tbsp runny almond butter
1/4-1/3 cup dairy free milk
1 tsp vanilla extract
one melted unsweetened chocolate bar and toasted coconut shreds
Instructions
mix the chia pudding ingredients and place in the fridge for at least 3-4 hours.
blend the date caramel ingredients in a food processor until a thick paste forms.
add to the top of the chia pudding after it has set and then top with the melted chocolate. sprinkle coconut shreds on top and freeze for 30 minutes. enjoy!
