i’m taking the classic grilled cheese back to my family roots with this Vegan Greek Girl Grilled Cheese!

this take on grilled cheese is the cheesiest, creamiest one you’ll find!

want to know what the flavor profile is like? ok, get ready for this.

this glorious sandwich tastes like a hybrid of grilled cheese, tzatziki and spanakopita.

if that is not a recipe you need immediately, then i don’t know what is!

these gems are double cooked, but don’t worry, the cooking process is not long at all.

first, you grill the sandwiches in a little avocado oil for a couple of minutes on each side until they’re golden brown and crispy.

then, add those bad boys to a baking pan and place it in the oven.

Vegan Greek Girl Grilled Cheese will need to bake 12 minutes and then i do recommend broiling it at the end if you use the same topping cheese i did.

i used vegan feta and shredded vegan mozarella for the inside of Vegan Greek Girl Grilled Cheese.

then, i topped it with miyokos liquid mozarella for that extra cheesy goodness, but you can always omit that if you can’t get ahold of any.

also, you can top the sandwiches with another kind of vegan cheese instead!

i also added creamy coconut yogurt and lemon juice to the filling to make it tangy and you get that tzatziki effect.

i added sliced onion, fresh dill, and minced garlic to enhance the flavors.

you can use any bread you like, but i used sourdough. i love the literal sour taste of the bread and it cooks beautifully!

this sandwich tastes delicious and is super easy to make! it only takes about 15-20 minutes total and you can serve it alone or as a side!

yields 4-5 large sandwiches but only 3 are pictured

Ingredients

  • cheesy filling
  • 8 oz vegan feta

  • 1/2 cup creamy coconut yogurt

  • 1/4 cup sliced onion

  • 1 tbsp minced garlic

  • 1 tbsp lemon juice

  • sea salt and pepper to taste

  • 1/4 cup (or more) chopped fresh dill

  • 3/4 cup shredded vegan mozzarella

  • 8 slices large sourdough (4 large sandwiches)

  • more vegan cheese for topping (used miyokos liquid mozarella)

  • avocado oil for pan frying

Directions

  • add all filling ingredients but the dill and shredded mozzarella to food processor and blend until a thick and creamy consistency forms. then, fold in the dill and shredded cheese.
  • top slices of sourdough generously with the mixture and cook on the stove top with avocado oil for a couple of minutes on each side until crispy and golden brown.
  • add to a large baking tray and coat with more cheese if you like.
  • bake at 400 degrees for 12 minutes and broil for a minute at the end.
  • slice and enjoy!!
