Ingredients
cheesy filling
8 oz vegan feta
1/2 cup creamy coconut yogurt
1/4 cup sliced onion
1 tbsp minced garlic
1 tbsp lemon juice
sea salt and pepper to taste
1/4 cup (or more) chopped fresh dill
3/4 cup shredded vegan mozzarella
8 slices large sourdough (4 large sandwiches)
more vegan cheese for topping (used miyokos liquid mozarella)
avocado oil for pan frying
Instructions
add all filling ingredients but the dill and shredded mozzarella to food processor and blend until a thick and creamy consistency forms. then, fold in the dill and shredded cheese.
top slices of sourdough generously with the mixture and cook on the stove top with avocado oil for a couple of minutes on each side until crispy and golden brown.
add to a large baking tray and coat with more cheese if you like.
bake at 400 degrees for 12 minutes and broil for a minute at the end.
