Ingredients
3 tbsp extra virgin olive oil
2 cloves minced garlic
1/2 cup chopped onion
1 head broccolini cut into florets
1 cup butternut squash cut into very small cubes
1 bunch lacinato kale (sliced)
1 tsp garlic powder
1 tsp onion powder
1 tsp ground mustard seed
1/2 tsp turmeric
64 ounces veggie broth
3 cups coconut milk
1/3 cup peanut butter
1/3 cup fresh lemon juice
1 cup arborio rice
1/4 cup nutritional yeast
Instructions
sauté the onion and garlic, kale, broccolini and butternut squash in olive oil for 3 minutes on medium heat and then add the seasonings and liquids.
mix well and let that cook for 30 minutes and stir periodically.
then, add the nutritional yeast, peanut butter and rice.
cook another 25-27 minutes until the rice is fully cooked and the soup thickens.
store in the fridge in an airtight container and enjoy!
