Ingredients
9 large medjool dates 2 scoops vanilla protein powder (about 29g per scoop) 1/2 cup gluten-free oat flour 1/2 cup runny peanut butter 1/3 cup dairy-free milk (adjust if needed) 1 tsp vanilla extract 1/2 cup chocolate chips for mixing in the dough additional melted chocolate for topping (about 1 cup chocolate chips)
Instructions
prepare the dates: remove the pits from the medjool dates if they haven't been pitted already.
combine ingredients: -in a food processor, combine the pitted dates, vanilla protein powder, oat flour, runny peanut butter, dairy-free milk, and vanilla extract. -blend until a smooth dough forms. if the peanut butter isn't runny enough, you can add more dairy-free milk to achieve the desired consistency.
fold in chocolate chips: -once the dough is smooth, fold in the chocolate chips using a spatula or spoon. make sure they're evenly distributed throughout the dough.
freeze: -transfer the cookie dough mixture to a lined baking dish or tray. spread it evenly and place it in the freezer for at least one hour to firm up.
top with melted chocolate: -after the cookie dough has set in the freezer, melt additional chocolate if desired and pour it over the top of the cookie dough layer. spread it evenly using a spatula.
chill: -return the dish to the freezer for a few minutes to allow the melted chocolate to set.
serve: -once the chocolate has hardened, you can slice the cookie dough cake into pieces and serve. enjoy your delicious no-bake protein cookie dough cake!
