Ingredients
salad
1 and 1/2 boxes cooked gluten free pasta
2 medium avocados cut into cubes (halved)
1 packet of vegan bacon of your choosing (used light life tempeh)
1 bag shredded romaine lettuce
1/2 thickly sliced red onion
dressing
1/3 cup vegan mayo (chosen foods)
1/3 cup vegan cream cheese with a few tbsp water to thin it out
1/2 tbsp stone ground mustard
1 tbsp liquid aminos
1-2 grated garlic cloves
1/2 tsp onion powder
Instructions
cook the pasta according to package directions and once it's cooked down, add to a large mixing bowl with the other salad ingredients.
whisk the dressing ingredients and pour over the salad.
serve cold or at room temp and enjoy!
store in the fridge in an airtight container.
