baked oatmeal
2 cups old fashioned oats
1/2 cup almond flour
1 tsp baking powder
1 tsp baking soda
1/4 cup flax meal
1 tsp cinnamon
1/4 cup maple syrup
1/2 tbsp vanilla extract
3/4 cup dairy free yogurt
3/4 cup dairy free milk
sauteed apples
1 large honeycrisp or 2 smaller ones cut into small cubes
2 tbsp coconut oil
1-2 tbsp maple syrup
1 tsp cinnamon
Instructions
preheat the oven to 350 degrees. saute the apples in coconut oil with maple syrup and cinnamon for about 10 minutes on medium heat.
then, start by mixing all of the ingredients but the apples in a bowl until a thick batter forms.
gently fold in the apples and then add the batter to a lightly greased or parchment paper lined 8 x 8 baking pan.
bake at 350 degrees for 25 minutes. cool down and add cream cheese to the top if you would like.
