Ingredients
1 and 1/2 cups organic all purpose unbleached flour (gluten free oat flour may work as a sub)
1 tsp baking powder
1 tsp baking soda
1/2 cup cocoa powder
1/2 cup organic raw cane sugar
1/3 cup avocado oil
1/3 cup thick coconut yogurt (used cocojune)
2/3 cup dairy free milk
1/2 tsp vanilla extract
1/2 tsp peppermint extract (can omit to make regular brownies)
1/2 cup chocolate chunks or chips
powdered sugar for topping
Instructions
preheat the oven to 350 degrees.
mix the brownie ingredients until a thick batter forms, fold in the chocolate chunks and add to an 8 x 8 parchment lined baking pan.
bake at 350 degrees for 26 minutes and then let the brownies cool down completely, for about an hour.
dust the top with powdered sugar, cut into squares and enjoy! store in the fridge or freezer in an airtight container.
