Triple Layer Vegan Chocolate Almond Butter Bars

happy Thursday, let’s celebrate with Triple Layer Vegan Chocolate Almond Butter Bars! what a delicious vegan treat! they’re absolutely heavenly slices of three layers- a brownie layer, almond butter mixture and then melted chocolate on top. you’re going to love this one.

before i go to sleep at night, i watch a bunch of reels and tiktok videos and saw someone make Twix brownies.

while these are not Twix brownies, that was sort of the inspiration.

Triple Layer Vegan Chocolate Almond Butter Bars are a decadent dream but you will be very surprised to know the ingredients are so real and minimal.

to sweeten the bars, you’re just going to need maple syrup!

the chocolate layer on top isn’t even that sweet- i used chocolate chips with 4 g of sugar in them, but you can use ones with less or more.

while the bars are absolutely sweet, they’re not overpoweringly sweet at all and you can totally taste the flavors.

that’s key with desserts- i want to taste the almond butter, coconut oil, coconut flour and chocolate, not just sugar.

so, the bottom layer is this gorgeous brownie! then, the center is made up of almond butter, coconut oil, vanilla extract, cinnamon and coconut flour.

lastly, there is a chocolate layer that’s just melted chocolate chips and coconut oil. you could also use vegan butter.

Triple Layer Vegan Chocolate Almond Butter Bars set in the freezer after each layer and the key to cutting perfect squares so the chocolate doesn’t crack is leaving the bars out at room temp.

here’s a tip though- after you cut the bars into squares once they thaw, the brownie layer will become slightly soft, so make sure you pop them back in the freezer for 30 minutes.

then, they will be PERFECT!

you’re going to store Triple Layer Vegan Chocolate Almond Butter Bars in the freezer! you can just let them thaw a little bit before eating.

the key is the thaw them just enough to slightly soften the bars, if they sit out too long, the brownie layer can become soggy.

freezer bars are honestly the best!! you can have them on hand at all times, and what a perfect treat after dinner!

Ingredients

  • brownie layer
  • 1/2 cups almond flour

  • 1 cup oat flour

  • 1/2 cup cocoa powder

  • 1/4 cup vegan cream cheese

  • 1/4 cup agave or maple syrup

  • 1/4 cup almond milk

  • almond butter layer
  • 1 cup creamy almond butter (or any nut butter)

  • 1/4 cup maple syrup

  • 1/3 cup melted coconut oil

  • 1 tsp vanilla extract

  • 1/4 tsp cinnamon

  • 4 tbsp coconut flour

  • chocolate layer
  • 1 cup dairy free chocolate chips

  • 2 tbsp coconut oil

Directions

  • add the brownie layer ingredients to a bowl and mix well! add to a parchment lined 8 x 8 baking pan.
  • place in the freezer for 30 minutes, remove and add the middle layer. place back in the freezer for 30 minutes to set. then, remove, add the chocolate layer and freeze for 3 hours.
  • remove and let the hard chocolate top thaw for about 15 minutes or until you see it start to thaw so that when you cut the bars into squares, the chocolate doesn’t crack.
  • place back in the freezer for 30 minutes so the brownie layer becomes more firm and enjoy!
  • store in the freezer in an airtight container.
