we have made it halfway through the week! let’s celebrate with a Giant Healthy Vegan Chocolate Chip Cookie because, why not?! this is such an easy recipe to make and you can of course share it if you want, but this makes the perfect dessert for a self care day.
in fact, that’s the reason i made my Giant Healthy Vegan Chocolate Chip Cookie. i wanted to take the afternoon for self care and this cookie was the perfect treat.
packed with oat flour, sprouted oats, apple sauce, and mini chocolate chips, the cookie tastes so decadent yet it’s made with real ingredients.
that’s the best kind of recipe in my opinion!

the texture is the second best part to the taste. oh my goodness, this texture is just ridiculously good. it’s sooo soft and slightly chewy at the same time!
obvs the chocolate chips aren’t necessary, but idk if there’s a replacement quite as good. plus, they’re so melty and gooey and make the cookie heavenly.
like i said above, this cookie is made with oat flour and oats! for the oat flour, i used arrowhead mills and for the oats, one degree organics. i have not tried any flour subs, so ya know the drill, sub at your own risk!
based on experience, spelt flour has been the best replacement for oat flour, so you could always try that, but i don’t think it’s nearly as common.
i also have a hard time finding it at many grocery stores, so i think oat flour would be the best route to take!
if you want the cookies gluten-free, just make sure your oat flour and oats are certified GF.
the cookie batter is going to be a bit on the sticky side, so that’s normal if you’re like hmmmm. you can totally mold it into a cookie shape though, just use a spatula like i did.
more chocolate chips on the top becauseeeee why not?!
here’s everything you’re going to need:
- oat flour
- baking powder
- coconut sugar
- almond butter
- almond milk
- chocolate chips
as far as some subs, you can use any kind of dairy free milk, it doesn’t have to be almond. also, instead of almond butter, any nut or seed butter will work!
if you’re not a fan of applesauce, just sub 1:1 with mashed banana! it will be just as scrumptious.

Giant Healthy Vegan Chocolate Chip CookieCourse: Cookies, DessertsDifficulty: Easy
yields 1-2 servings depending if you want to share it lol.
1/2 cup oat flour
1/4 cup oats
1/2 tsp baking powder
1.5 tbsp coconut sugar
1.5 tbsp almond butter
2 tbsp applesauce
1/4 cup unsweetened almond milk
2 tbsp mini chocolate chips (or however many you want)
- preheat the oven to 350 degrees.
- mix the ingredients in a bowl until a thick batter forms. transfer to a parchment lined baking tray and flatten with a spatula.
- bake at 350 degrees for 15 minutes, cool down completely so the cookie holds its shape and enjoy!
- store in the fridge or freezer in an airtight container.
