Peanut Butter Chocolate Chip Marshmallow Cookies

sure, chocolate chip cookies are like, the best thing in the entire world……BUT, have ya ever stuffed them with MARSHMALLOWS. it’s quite an upgrade that i never knew i needed.

after an initial bite into the cookie, the second one brings the best surprise! you will have to check out the texture pictures throughout this post to see how amazing the center is!!

your options don’t end at marshmallows of course, another fun twist would be just making peanut butter cookies and stuffing the center with chocolate chips!

Peanut Butter Chocolate Chip Marshmallow Cookies remind me of something that i would find at a bakery. the vegan texture and healthier ingredients are not detectable, which is the best!

so if you’ve been following for a while, you may know that my two favorite flours to combine are almond and oat, so that’s what i did here!

please sub at your own risk lol because this is the only version i made. i ALWAYS encourage you to check out other recipes on my blog and see if there’s something similar with a different flour.

it’s easy to add chocolate chips and marshmallows, so for example, my Chewy Vegan and Gluten-Free Chocolate Chip Cookies would be a great recipe to check out!

lots of questions about the marshmallows i use whenever i make something incorporating them!

my go-to is typically dandies! let me know if you know of any other brands though. dandies marshmallows are vegan and they taste really yummy.

the marshmallows melt well too, so they’re great for making rice crispy like treats.

it’s always helpful to see a step by step process, so i’ve definitely been trying to make more videos showing the steps. this recipe is the same as my other cookie recipes except the center is stuffed with marshmallows!

as you can see in the video, i used mini ones and two for each cookie. you don’t want to overstuff them where the marshmallows entirely break through the top, but just enough that they ever so slightly show through!

how do you store them?

i store all of my cookies in the fridge or freezer. of course i warm them up after being stored in the freezer. as for the fridge, it depends on the cookie!

sometimes, i love the cookie texture fresh out of the fridge and other times, i prefer them slightly warm for a softer texture- this cookie is one of those.

warming Peanut Butter Chocolate Chip Marshmallow Cookies is the best because then you get that melty, gooey marshmallow center and melted chocolate chips. the BEST!

what all do you need?

again, please make subs at your own risk lol. when people switch the flours or other ingredients i use and then are disappointed in the outcome…. it’s like come on now, baking is precise.

you will end up getting a different texture if you use other flours. the cookies still might turn out fabulous…but maybe not. for example coconut flour would be the worst flour to sub with for vegan baking in my opinion.

ok rant over, here’s what you need!

  • almond flour

  • oat flour

  • baking powder

  • peanut butter

  • almond milk

  • maple syrup

  • marshmallows

  • chocolate chips

yay, that’s it! super simple ingredients along with an easy process to make them! my favorite because we don’t have time for complicated, right?!

this is my new phone background lol. i’m so serious, my phone background changes often of course depending on a new recipe. it’s too beautiful not to stare at. maybe i should just get this made into a large print and hang it in our apartment.

ok, that’s a bit too much BUT this pic sure is beautiful. you can see the cookies are soft in the center, a little harder on the outside and then the marshmallows perfectly melted in the center.

what should you serve the cookies with?

dairy free milk of course! is there anything more perfect than dunking a fabulously delicious chocolate chip cookie in a cold glass of milk? i think not!

you could also crumble the cookie into a bowl and pour dairy free milk on top-ya know, kind of like cereal? it works, trust me!

Peanut Butter Chocolate Chip Marshmallow Cookies

Ingredients

  • 1/2 cup oat flour

  • 1 cup almond flour

  • 1 tsp baking powder

  • 6 tbsp dairy free milk

  • 3 tbsp maple syrup

  • 1/2 cup creamy and runny peanut butter (important it’s runny)

  • 1/3 cup chocolate chips

  • mini marshmallows (2 per cookie)

Directions

  • mix the dry ingredients in a bowl and then add in the wet ones.
  • mix well until a thick dough forms and then fold in the chocolate chips.
  • take a medium size spoon full, flatten a bit and add a couple of marshmallows to the center. make sure they are tightlyΒ packed in. cover the marshmallows completely with the dough, mold into a ball and slightly flatten into a cookie. repeat with the remaining dough and marshmallows.
  • add to a parchment lined baking tray and bake at 350 degrees for 12-13 minutes.
  • let the cookies rest and set for 15 minutes!
