The Best Vegan and Gluten-free Homemade Bread

all caps, I AM SO EXCITED ABOUT THIS BREAD! it is a vegan baking masterpiece i tell ya! not only is the bread vegan, as per the title, it is indeed gluten free. run to the kitchen to make this deliciousness!

it’s fluffy, baked all the way through perfection and the taste is 10/10. the ingredient profile is stellar by the way, no funky ingredients.

oh my gosh, i am still in awe of this bread lol. here’s the thing, i adore a fudgy dessert bread, ya know the one that’s not baked all the way through.

in fact, i live for that texture, but just when it comes to banana breads, chocolate chips, cinnamon roll, etc. however, this is a bread that i needed to be fully baked and fluffy.

while this bread does have sweetness, it can be eaten savory for sure and that’s actually how i recommend you eat it!

gluten free all purpose baking flour is the main ingredient here and you’re going to need two full cups.

i used Bob Red Mill 1:1 gluten free baking flour, so make sure you use that or another blend with the same flours. you can of course try other blends, but don’t expect the texture to be the exact same.

also, the other key ingredient is YEAST! you have to use yeast if you want to achieve this texture, there’s just no getting around it and personally, i love baking with it.

the other ingredients you’re going to need are unsweetened plain almond milk or any dairy free, maple syrup and avocado oil.

that’s it! The Best Vegan and Gluten-free Homemade Bread is seriously a dream when it comes to convenience and ingredients.

you just have to warm up the almond milk until it’s warm but not hot and steaming, then add the avocado oil and maple syrup.

whisk that together, add to the yeast in a large mixing bowl and stir. then, you can add the flour!

once everything is a thick yet wet batter, you can cover the bowl with a kitchen towel or paper towels and let that set for about 30-45 minutes.

after that, add to a bread loaf pan, bake at 350 degrees for about 32 minutes and boom, it’s done. if you want yours a little more golden brown, you can leave it in a couple more minutes!

Ingredients

  • 2 cups gluten free all purpose flour (see text for brand)

  • 1 packet rapid rise yeast

  • 1 and 1/4 cup plain unsweetened almond milk

  • 1/4 tsp sea salt

  • 1/8 cup avocado oil

  • 1/3 cup maple syrup

  • 1/2 cup pumpkin seeds

  • 1/3 -1/2 cup sunflower seeds

  • 2 tbsp chia seeds

Directions

  • preheat the oven to 350 degrees.
  • warm up the almond milk until it’s warm but not hot and steaming, then add the avocado oil and maple syrup.
  • whisk that together, add to the yeast in a large mixing bowl and stir. then, you can add the flour!
  • once everything is a thick yet wet batter, you can cover the bowl with a kitchen towel or paper towels and let that set for about 30 minutes.
  • mix in the seeds if you would like and after that, add to a bread loaf pan, bake at 350 degrees for about 42-45 minutes and boom, it’s done. if you want yours a little more golden brown, you can leave it in for a couple more minutes!
