14 ounces extra firm tofu cut into cubes (the more solid the better)
8 ounces sliced cremini mushrooms
9 ounce bag of shredded red and green cabbage
1 and 1/4 cup vegetable broth
peanut sauce
1/4 cup very creamy peanut butter
2 tbsp liquid aminos
1 tbsp ginger juice
4 tbsp vegetable broth or water
1 tsp garlic powder
1 tsp onion powder
1/2 tsp chili powder
sea salt to taste
Instructions
add the veggies and tofu to a large pan along with the vegetable broth. cook on medium-high heat for 8-10 minutes or until the veggies are cooked down and the liquid is absorbed.
then, whisk the sauce ingredients together and pour over the tofu and veggie mixture.
serve with large romaine hearts or wraps of your choosing and enjoy!
