The Best Vegan PB & J Pancakes

pancakes are one of my favorite breakfasts of all time, and The Best Vegan PB & J Pancakes are simply on another level of deliciousness.

they are THE fluffiest pancakes you will ever try and they’re made with such minimal ingredients.

you would never know the pancakes are vegan! in fact, the texture resembles pancakes that are made with eggs and buttermilk.

the fluff factor can be attributed to the carefully curated ingredient. the base is actually comprised of two kinds of flours.

i combined whole wheat flour with spelt flour, which produces an amazing texture.

you can use just one or the other as they are pretty good replacements for each other, but if possible, i do recommend using a combination.

whole wheat flour and spelt flour can be found at just about every grocery store, so you don’t need to go to Whole Foods or anything.

while these are called The Best Vegan PB & J Pancakes, you can of course keep them plain rather than add peanut butter and jam.

a peanut butter and jam combo just happens to be my calling, so i will never turn down that combination.

for the jam, you can use a homemade one like i did, or store-bought works just fine.

to make my homemade jam, i simply cooked frozen dark sweet cherries, frozen blueberries, cinnamon and a little bit of arrowroot starch with water until the liquid absorbed.

while i don’t have a full recipe, there are other jam recipes on my blog, plus, jam is super easy to make!

the recipe yields 1-2 servings by the way and this depends on how hungry you are, lol! i was able to make 5 pancakes, but only 4 are shown because yes, your girl got hungry.

The Best Vegan PB & J Pancakes

yields 1-2 servings

Ingredients

  • 1/2 cup spelt flour

  • 1/2 cup whole wheat flour

  • 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1 tbsp flax meal

  • 1 tbsp arrowroot starch or cornstarch

  • 2 tbsp maple syrup

  • 1 tbsp avocado oil or evoo

  • 3/4 cup + 2 tbsp dairy free milk

  • pinch of cinnamon if wanted

  • peanut butter and jam of your choosing

Directions

  • in a mixing bowl, whisk together the dry ingredients first and then add in the wet ones.
  • mix well until a thicker batter forms and there aren’t any lumps. let the batter rest for about 2 minutes.
  • add a little bit of oil to a non-stick pan and use a 1/4 cup measuring cup to scoop the batter onto the pan.
  • cook the pancakes on medium low heat for about 2 minutes on each side, or until each side is golden brown. you may have to slightly adjust the heat or the cooking time depending on each pancake-just monitor.
  • add peanut butter and jam as you wish and a drizzle of maple syrup. enjoy!
