in a mixing bowl, whisk together the dry ingredients first and then add in the wet ones.
mix well until a thicker batter forms and there aren't any lumps. let the batter rest for about 2 minutes.
add a little bit of oil to a non-stick pan and use a 1/4 cup measuring cup to scoop the batter onto the pan.
cook the pancakes on medium low heat for about 2 minutes on each side, or until each side is golden brown. you may have to slightly adjust the heat or the cooking time depending on each pancake-just monitor.
add peanut butter and jam as you wish and a drizzle of maple syrup. enjoy!
