Ingredients
salad
1 bunch lacinato kale sliced thinly
1 large cucumber cut into quarters
1 and 1/2 cups edamame
1/3 medium size red onion chopped finely
2 large avocados cut into small pieces
1/3 cup sliced green onion (can omit if too much onion for you)
1/2 cup macadamia nuts
1/2 cup walnuts
1/3 cup pumpkin seeds
8 ounces vegan ricotta
dressing
1/3 cup runny peanut butter
1/2 tbsp minced garlic
1/2 tsp onion powder
1 tbsp miso paste
1 tbsp dijon mustard
1/2 cup veggie broth
Instructions
add all salad ingredients to a large salad bowl.
whisk the dressing ingredients well and then pour on top of the salad.
mix very well until everything is coated. serve cold or room temp and enjoy!
store in the fridge in an airtight container.
