Ingredients
3 cups cooked rice of your choosing (cook according to package directions)
veggies and tofu mixture
3 tbsp avocado oil
1/2 cup chopped red onion
1.5 cups sliced carrots
2 cups broccoli florets
14 ounces extra firm tofu cut into small cubes
1 and 3/4 cup vegetable broth
peanut sauce
2 tbsp liquid aminos
1/4 cup vegetable broth
1 tbsp ginger juice
1 tsp dijon mustard
1/3 cup creamy peanut butter
1/2 tsp garlic powder
1/2 tsp onion powder
Instructions
cook the rice according to package directions.
sauté the veggies and tofu in avocado oil for 6 minutes on medium-high heat and stir fairly often.
then, add the 1 and 3/4 cup veggie broth and cook an additional 12 minutes or until the liquid is absorbed.
mix the peanut sauce ingredients together in a bowl and pour over the veggies and tofu.
serve with rice and enjoy!
