Ingredients
cookies
1 cup dairy free yogurt (see text for brand)
1 and 1/2 scoops vanilla protein powder (used garden of life)
1/2 cup heavy coconut cream (thick part only)
1/3 cup dairy free milk
1 bag freeze dried raspberries (bag was .8 ounces)
melted chocolate
1 and 1/4 cup low sugar chocolate chips (used trader joe's)
2 tbsp coconut oil
Instructions
add all cookie ingredients to a mixing bowl and stir until well combined.
use a 1/4 cup measuring up to evenly distribute the mixture into cookies on a parchment lined baking tray.
freeze for 2 hours.
melt the chocolate chips with coconut oil and let the mixture cool down.
dunk or drizzle the cookies, freeze another hour and enjoy!
store in the freezer in an airtight container and thaw a little bit before eating.
