another day another amazing dessert recipe and today, i have Easy Vegan and Gluten-Free Brookies for you. they’re absolutely delicious and made with amazing ingredients. you won’t believe how decadent and luxurious the brookies taste. did i mention they’re gluten-free?
oh my goodness, i don’t know what the best part about Easy Vegan and Gluten-Free Brookies even is?!
is it the gooey, fudgy brownie layer or is the the soft cookie layer on top?
oh there’s chocolate galore in this recipe by the way.

i added 1/3 cup chocolate chunks to the brownie batter itself and then there’s chocolate chips in the cookie dough of course.
that’s how it should be done in my opinion, lots of indulgence yet real ingredients are key.
the layers are made with almond flour, almond butter, oat flour, maple syrup and some other goodies that you very likely have sitting in your pantry.
the cookie dough layer is also really easy. there’s ingredient overlap in both of the layers, so the convenience is a plus.

the cookie dough layer is made with predominately oat flour while the brownies are made with mostly almond flour.
it adds good balance and a little mix up when it comes to the texture.
by the way, if you don’t like ultra fudgy desserts, then i’m not sure this is the one for you. just look at the pics for reference haha, i mean it’s FUDGY.
you will probably need a fork. while this holds up well (you can pick up the pieces), they are delicate due to the texture.

that’s not a bad thing though, personally, i only want gooey brownies and nothing less.
to keep this recipe entirely gluten free, just make sure that you use a gluten free oat flour, like Bob’s Red Mill!
also, if you want to use a different nut or seed butter as opposed to almond butter, then go for it! i love almond butter because it’s more neutral in here for the other flavors to shine through.
however, if you’re a huge peanut butter fan, that would be a great option. i mean peanut butter and chocolate, where could you possibly go wrong?

Easy Vegan and Gluten-Free Brookies

- brownie layer
1 and 1/2 cups almond flour
1/2 cup gf oat flour
1 tsp baking powder
1/3 cup coconut sugar
1/2 cup cocoa powder
3 tbsp extra virgin olive oil
1/3 cup maple syrup
1/3 cup runny almond butter
1 tsp vanilla extract
1/2 cup dairy free milk
1/3 cup chocolate chunks
- cookie layer
1 cup + 2 tbsp gf oat flour
1/3 cup almond flour
1/3 cup runny almond butter
1/3 cup maple syrup
1 tsp vanilla extract
3 tbsp dairy free milk
1/3 cup chocolate chips
Directions
- preheat the oven to 350 degrees.
- mix all brownie ingredients and separately mix the cookie layer ingredients.
- add the brownie ingredients to an 8 x 11 baking pan lined with parchment paper.
- distribute the thick cookie dough on top of the brownies as much as possible and bake at 350 degrees for 25 minutes.
- let the brookies cool completely before cutting into squares, this is very important.
- store in the fridge or freezer in an airtight container and enjoy!
