Lightened Up Mini Chocolate Cookie Dough Loaves

happy monday babes! today, i have a super yummy recipe that has the best of both worlds- chocolate bread basically and then a cookie dough topping. put them together and you have the most scrumptious dessert of all time.

i have gotten quite a few requests for sugar free options! while the chocolate chips that i used have cane sugar, for the loaves and cookie dough, i used monkfruit sweetener.

you totally don’t have to, it’s just an option if you want and lakanto classic monkfruit sweetened is a 1:1 substitute.

you can of course use organic cane sugar, which i also love!

the base is this gorgeous, rich chocolate bread/cake that is perfect when it comes to taste and texture.

the key to get a delicious depth of flavor is almond extract, but you can definitely use vanilla extract too!

while the chocolate mini loaves are baked of course, the cookie dough topping is no bake and it is just divine.

the base is made with almond flour and then peanut butter for a delicious nut buttery addition. you don’t have to use peanut butter and can substitute with something else!

just a heads up because i know that i will get asked, this is not a gluten free recipe because i used whole wheat flour, which is one of my favorites for baking.

you are more than welcome to try the recipe with gluten free all purpose flour but of course, it will not turn out the same.

also, this recipe calls for 1/3 cup extra virgin olive oil, which you can sub with avocado oil or melted coconut oil.

in order to make this recipe totally sugar free, you would want to use sugar free chocolate chips, which i did not! lakanto also makes awesome chocolate chips.

all that i had on hand were enjoy life mini chocolate chips and they’re so cute in this recipe!

  • whole wheat flour

  • baking powder

  • cocoa powder

  • extra virgin olive (see above for subs)

  • organic cane sugar or lakanto

  • almond extract

  • dairy free milk

  • almond flour

  • peanut buter

  • chocolate chips

Lightened Up Mini Chocolate Cookie Dough Loaves

Ingredients

  • mini chocolate loaves
  • 1 and 1/2 cups whole wheat flour

  • 1/3 cup cocoa powder

  • 1 tsp baking powder

  • 1/3 cup + 3 tbsp monkfruit sweetener

  • 1/3 cup extra virgin olive oil (see text for subs)

  • 1 and 1/3 cup dairy free milk

  • 1/2 tsp almond extract

  • cookie dough
  • 1 cup almond flour

  • 1/4 cup monkfruit sweetener

  • 1/4 cup runny peanut butter

  • 1/4 cup dairy free milk

  • 1/3 cup (or more) chocolate chips

Directions

  • mix the chocolate loaves ingredients in a mixing bowl until a thick and smooth batter forms.
  • pour into mini loaves pans and bake at 350 degrees for 20 minutes.
  • cool down and then add the cookie dough to the top.
  • mix the cookie dough ingredients in a bowl and then fold in the chocolate chips. top the loaves and enjoy!
  • best eaten day of but you can store in the fridge in an airtight container.
