Peanut Butter Cookie Dough Ice Cream

it’s warming up everywhere, so you know what that means? ICE CREAM! oh, Peanut Butter Cookie Dough Ice Cream that is. guess what? you don’t need an ice cream machine to make this easy recipe at home.

with homemade cookie dough chunks, sweetness from both banana and maple syrup, and all the peanut butter, this will become the ice cream of your dreams.

the base is incredibly easy to put together with just six ingredients. you’re just going to need the basics to make this recipe and there’s a good chance you have everything already!

so, no ice cream machine huh? that’s right, you’re just going to need a bread loaf pan! if you have an ice cream machine, go for it but i’m not even sure how to use one lol.

you mix the base in the blender and then add to a bread loaf pan. you can totally line yours with parchment paper, i just forgot.

then, you pour the ice cream mixture inside, place in the freezer and stir everything 30 minutes for the next few hours.

it’s a little bit of work yes, but nothing complicated!

the cookie dough portion is SUPER easy to make too and it is homemade, but if you prefer something store bought, that’s totally fine!

this recipe is very customizable, so you could use other add in options other than what i used. any kind of crushed cookies would be great, chocolate, fruit, i mean you name it!

for the cookie dough, you’re just going to need oat flour, coconut sugar, peanut butter, unsweetened dairy free milk, pb or almond butter cups and chocolate chips.

easy enough! i used unreal brand almond butter cups that i bought from Whole Foods! i wanted peanut butter, but that was all they had.

y’all know there’s chocolate chips in the cookie dough too because how can ya leave those out!?

the soaked cashews are really important for the texture and taste, and i haven’t used any alternatives.

if you want to try full fat coconut milk or cream, go ahead but just know that i have not tried that way.

the reason i love cashews and banana together is because both create such a creamy texture and the flavors pair really well together.

Peanut Butter Cookie Dough Ice Cream

Ingredients

  • ice cream
  • 2 cups raw cashews soaked in hot water for a couple of hours, rinsed and drained

  • 1 cup almond milk

  • 1/4 cup runny peanut butter

  • 1/4 cup maple syrup

  • 1 large very ripe banana

  • 1/2 tsp vanilla extract

  • cookie dough
  • 1/2 cup oat flour

  • 3 tbsp coconut sugar

  • 1 tbsp peanut butter

  • 3-4 tbsp almond milk (add more if needed)

  • 1/3 cup chopped almond or peanut butter cups

  • 1/4 cup chocolate chips

Directions

  • add the ice cream ingredients to a high power blender and blend on high until a smooth and creamy consistency forms.
  • then, add to a bread loaf pan and evenly distribute it. every thirty minutes for 2 and half hours, remove the ice cream and mix well to avoid clumping.
  • mix the cookie dough ingredients in a bowl until well combined and add chunks to the ice cream. mix well and then place back in the freezer for another 30-45 minutes.
  • serve with your favorite toppings and store in the freezer in an airtight container. you will have to let it thaw a bit before eating because it gets super hard! enjoy!
