Ingredients
cookie dough
9 large medjool dates
2 scoops vanilla protein powder (29g per scoop)
1/2 cup gluten free oat flour
1/2 cup runny peanut butter
1/4 cup + 2 tbsp dairy free milk (add more if your peanut butter isn't runny enough)
1 tsp vanilla extract
1/2 cup chocolate chips
filling
1/2 cup runny peanut butter
1 scoop vanilla protein powder (29g per scoop)
1 tbsp coconut oil
2 tbsp maple syrup
melted chocolate for coating
Instructions
add all cookie dough ingredients but the chocolate chips to the food processor.
blend until a thick dough forms and fold in the chocolate chips.
add a base layer to parchment paper muffin cups. then, add a spoonful of the filling and flatten.
freeze for one hour, top with another layer of cookie dough and dunk in melted chocolate.
freeze for 10 minutes and enjoy! store in the fridge or freezer in an airtight container.
